COCONUT FLOUR WAFFLES


These waffles are made with REAL ingredients (I used all organic ingredients but you don’t have to). These low carb waffles are the perfect fuel for a busy morning or for a fun weekend brunch. They are also freezer friendly and excellent for meal prep.


Total Time: 30 minutes | Prep Time: 15 minutes | Serves: 2

Ingredients:

  • 2 large eggs

  • 1/4 cup of coconut flour

  • 1 teaspoon of cinnamon

  • 1/4 cup of milk of choice + 2 tablespoons of milk of choice

  • 1/2 teaspoon of baking powder

Directions:

  1. Heat a waffle maker and spray the inside with a nonstick cooking spray.

  2. In a medium bowl mix all ingredients until everything is combined and smooth.

  3. Transfer the batter into the waffle maker and cook for approximately 7-10 minutes. All waffle makers are made different so yours may cook a little faster or slower depending.

  4. Carefully lift the waffle and dress them as you like.


Tips:

This simple waffle recipe serves as a good base to get your creative mind going. I always add different types of berries with some coconut nibs and when i’m feeling extra and want to impress my guests, i’ll even add some maple bacon with some roasted almonds. This recipe is an amazing gluten free and paleo base but feel free to have fun and to add your favorite sides.
